Default My 365 recipes -- week 17

Rosemary Pasta and Asparagus

1 lb asparagus (trimmed)
1 lb spaghetti
1/4 t coarse salt
2 T butter
1 large chopped onion
5 cloves sliced garlic
1 1/2 c vegetable broth
1 1/2 T chopped fresh rosemary leaves, plus sprigs for garnish
1/4 c freshly grated Parmesan, plus extra for topping

Heat oven to 400F. Spread asparagus on rimmed baking pan in a single layer; brush with oil and sprinkle with salt. Roast 7-12 minutes. Shake pan halfway through cooking to redistribute stalks. Cut stalks into 1 1/2 inch pieces.

In skillet, melt butter on medium-low. Cook onion and garlic 10 minutes. Add broth and rosemary; increase heat to medium-high and reduce liquid by half.

Cook pasta. Add to butter mix. Add cheese and asparagus. Garnish with sprigs. Serves 8.

I just bought a rosemary plant for my deck, and asparagus is on sale at my local Fresh Market! Can't wait to try this!
