Ooh, I was writing this response and I decided to play around---and whoo hoo!---I solved the irritating part you mentioned in #2.
I use AMP Font Viewer, and I love it. But I only keep about 600 fonts on my system. I've gone through and culled them out several times over the years and trimmed them down to the ones I really like. What I like about AMP Font Viewer is the ability to type in your own text and see it in the preview pane with all the other fonts. I thought that only worked with installed fonts. But I keep my not-installed fonts in a folder on my EHD. If you click "View Folder/Install List of Fonts," you'll get the Interchange Window (the big preview window in columns) and the ability to customize your font sample. It's a free program, you can google AMP Font Viewer.
