I was going to take a picture of a 27 series page in my book but I realized I don't have a Shutterfly book with that template in it. I would say that if your biggest desire is to retain the full-bleed, "off-the-page" result of some of those templates, leave them just as they are and make sure that the focal point of the photos are 1/4" from the edge of the page. The trim will take off a little of the outside edges, but it will leave the full-bleed effect. I think I would be more frustrated if I resized and then had paper that didn't go all the way to the edge. From a design standpoint, it sounds like the full bleed option is what you're looking for.
You could make the LO smaller by dragging just two corners.
This is a page I've done with that template and I left it full-size so that the photos would "fall off" the page. I didn't resize, I just left it, knowing that a little of the alligator would get trimmed, but that's okay, because her face is the focal point. And the butterfly is more than 1/4" in, so it won't get cut off, either.
