I am so sorry to hear about your family's loss!! When my dad died, I scrapped a few poster boards to display at the wake. They each had a different theme. One was photos of my dad as a boy called "Jackie," one was of him as an adult doing things he loved and some with my mom. That one was called "Jack." Then there was one of him with us kids through the years called "daddy." Then the last one was of him with the grandchildren titled "Bop." (that's what the kids call him). Anyway, the point is you maybe could do different kinds of pages based on what time in his life it was, or what activities he was into, or what "hat" he was wearing in his life at the time. I'd also brainstorm a list of favorite memories and ideas to refer to as you start creating.
This will be a wonderful project and surely help in the healing and the memories of happy times.
Prayers and hugs to you!
