I like making a chicken, spinach and sundried tomato risotto. We eat it as it's meant to be eaten the first day. Because it makes a truckload, the leftovers the next day are made into lovely big balls with a bit of cheese in the middle, dunked in egg and rolled in breadcrumbs and then in the fry pan to brown. We usuallly have this with salad, and I like sweet chilli sauce on mine.
