I just went and checked out your layouts. . . I think what makes them so great are all the stories behinds the photos. My vote would be to continue it just as it is. I would consider it a very special project that you won't do all the time and therefore justifies the cost . .but then I can always come up with ways to justify scrapbooking costs) But more importantly, ten years from now, your children will be delighted to have a year's worth of stories from when they were little. So whether you print it out as 8 x8 or 12 x 12, I think it is worth it to do the entire year. Personally I think one thick book would look awesome. But if two separate books are more economical than go for it. I wasn't bored by the repeated theme at all. It puts more focus on the pictures and words. I also loved the numbering! Great job! I'm sure the final product will be stunning!
