Debi, here is a screenshot of page two facing pages in Microsoft Publisher. I will be able to add all 52 pages plus my covers in one string. I only have 12 of the pages set up, but it is easy to add or subtract as many as you need. Easy Peasy!
I like to have all of my pages that I am using in a book all "in a row". I don't use these for printing purposes, just to see how they look together. In Publisher, it is easy to just click through them. Doing the facing pages in a 12 x 24 or 8 x 16 PSE page would be the same thing, just not as easy to string all of the weeks together.
I think that you can do this much better in either In Design or Illustrator too. But, I only have Publisher, so that is what I do.
Make any sense?
